The Plant Power Kitchen: The Space Between “I Could Never” and “Why Not?”

Whether you're curious about eating more plants, already enjoying a plant-only diet, or have been vegan for years, I'd like to invite you to discover just how exciting, affordable and satisfying plant-only food can be.
Through Our Happiness Factor CIC, I created The Plant Power Kitchen Pop-Up Events as something different. They are not cooking classes, nutrition workshops or lectures. Instead, they are immersive food experiences that bring people together around colourful, flavoursome plant-only food inspired by cuisines from around the world.
Since launching earlier this year, we've taken participants on culinary journeys through Mediterranean, Thai and Ital Rasta-inspired menus, each designed to demonstrate the diversity, creativity and abundance of plant-only food.
Looking ahead, upcoming Plant Power Kitchen events will explore Mexican, Indian, Ethiopian and French-inspired menus.
These events are for anyone experimenting with eating more plants, looking to expand their horizons, or considering taking the next step towards a more plant-focused lifestyle. There is no pressure, no preaching and no expectation that anyone has to change overnight.
The story behind The Plant Power Kitchen is also my own story.
For years, I was an enthusiastic meat eater and often said, “I could never stop eating meat.” My transition to a fully vegan lifestyle unfolded over a three-year period, not as a sudden shift, but as a gradual process of exploration, learning and discovery.
Now, five years on from stopping eating meat completely, I still hear the same questions all the time: “What do you eat?” “Where do you get your protein from?” The assumptions are familiar, but so is what I’ve learned through experience — that plant-based eating is far more varied, satisfying and accessible than most people imagine.
A big turning point for me was watching the documentary The Game Changers. It challenged so many of the myths I had grown up believing about protein, strength and meat-based diets, and opened up a completely different way of thinking about food and performance.
The film’s director, Louie Psihoyos, has said:
"We’re not telling people what to eat. We’re just showing them what happens when you rethink everything you’ve been told."

One of the most common things I hear is, “I could never stop eating meat.” I understand that because I used to say exactly the same thing. My journey wasn't about giving things up or following strict rules; it was about discovering new foods, new flavours and new possibilities one step at a time.
What's interesting is that “I could never” is about much more than food. It is one of the most common limiting belief patterns we encounter as human beings. Whether it's changing how we eat, learning a new skill, starting a project or making a life change, we often create unconscious boundaries around what we believe is possible for us. The words “I could never” can become a story we tell ourselves long before we have tested what is actually possible.
That's what The Plant Power Kitchen is all about. I want to create a space where people can simply experience what's possible. There's no pressure and no judgement. It's about experimenting, expanding horizons and perhaps taking the next step. Sometimes all it takes is one meal, one conversation or one new experience to move from “I could never” to “why not?”
As Robert Kennedy famously quoted George Bernard Shaw: “Some people see things as they are and ask why. I dream of things that never were, and ask why not?” That spirit sits at the heart of this work.
The events also challenge some of the common myths surrounding plant-only living, particularly the belief that it is expensive.
Research from the University of Oxford, published in The Lancet Planetary Health, found that plant-based diets can be among the most affordable dietary choices in high-income countries such as the UK. The study showed that vegan diets were the most affordable and could reduce food costs by up to one-third compared with typical diets.
This reflects what I see happening through The Plant Power Kitchen.
People are often surprised by how much money they can save by eating more plants.
Plant-only meals consistently come in at a lower cost than meals centred around meat. What excites me most is seeing people move beyond the “I could never stop eating meat” mindset and discover that eating more plants can be good for their wellbeing, their wallet and the planet.
